The kitchens of The Pavillon are William Elliott's domain. With each meal this great « Chef » creates a magical moment. A special moment where Tradition and Creativity, Beauty and Flavour join in harmony with the charm of your table.
He won his first Michelin star in the 2007 Guide and was awarded the 2009 "Chef of the Year trophy" for the North of France and Pas de Calais by the Champérard Guide.
"Respect the flavour and the quality of the produce you use, that's the simple truth behind good cuisine". That is William Elliott's philosophy and he gives pride of place to local produce: Le Touquet "ratte" potatoes, cabbage, fresh goat's cheese (from Montreuil), red berries from Samer (in the Boulonnais region), seafood (Audresselles lobster, freshly-caught turbot, sea bass…).
He works with the market gardeners of the region to devise vegetarian dishes.
His cuisine is both delicate and inventive, favouring low-temperature cooking out of respect for the produce.
Produce which he selects with infinite care and which he cooks with unerring, instinctive passion.
William Elliott enjoys treating his guests to unexpected flavours and combinations which catch the imagination and invite the mind to travel.
